A homemade cake, tender and full of autumn aromas

Sweet potatoes are one of autumn’s favorite ingredients. When roasted in the oven, they develop a natural sweetness that pairs beautifully with cinnamon and nutmeg.
This cake is tender, fragrant, and perfect alongside a cup of tea or coffee on a quiet afternoon. A simple recipe for enjoying the flavors of fall. 🍂🕯️
🥣 Ingredients
For one 9-inch round cake pan:
- 250 g cooked, peeled sweet potato
- 3 eggs
- 150 g sugar
- 100 ml sunflower oil
- 200 g all-purpose flour
- 1½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- A pinch of ground nutmeg
- 1 teaspoon vanilla extract
- A pinch of salt
- Powdered sugar for dusting, optional
🥄 Instructions
1. Prepare the oven.
Preheat the oven to 350°F (180°C). Grease a 9-inch round cake pan and line it with parchment paper if needed.
2. Prepare the sweet potato.
Cook the sweet potato until very tender. Let it cool, peel it, and mash it with a fork until smooth.
3. Beat the eggs and sugar.
In a large bowl, beat the eggs and sugar until the mixture becomes lighter in color and slightly fluffy. Add the sunflower oil and vanilla extract, and mix well.
4. Add the sweet potato.
Add the mashed sweet potato to the egg mixture and stir until thoroughly combined.
5. Mix in the dry ingredients.
In a separate bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, stirring gently until you have a smooth batter.
6. Bake the cake.
Pour the batter into the prepared pan and bake for 40–50 minutes. The cake is ready when a toothpick inserted into the center comes out clean or with a few dry crumbs.
7. Let it cool.
Let the cake rest in the pan for 10–15 minutes before removing it. Transfer it to a wire rack and allow it to cool completely.
✨ The Finishing Touch
Once the cake has cooled, dust the top with a little powdered sugar, if desired. Serve with a hot cup of tea or coffee.
Autumn tip: Roasting the sweet potato in the oven instead of boiling it helps keep the puree from becoming too watery and gives it a richer flavor.
One sweet potato, a little cinnamon, and a kitchen filled with wonderful aromas: sometimes, the magic of autumn is that simple. 🍠🍂
